Grease Lightning

BBQs, ovens and grease are not friends. But they go hand in hand. The majority of the grease from our ovens will run harmlessly into the ash pan where it is cool and can be disposed of with the ash. 

But we know some foods like a beautiful smoked brisket can release a lot of grease, so created a run off for excess grease to collect away from the firebox beside the ashpan, which can be easily removed for disposal.
